Instructions
- Slice the watermelon and remove the rind.
- Blend the watermelon pieces until smooth to make a puree.
- Strain the puree through a fine mesh sieve to remove any pulp (optional).
- Pour 2 ounces of watermelon puree into a champagne flute.
- Top with 4 ounces of chilled prosecco or sparkling wine.
- Gently stir to combine.
- Garnish with a small wedge of watermelon on the rim.
