Instructions
- Cut the watermelon into chunks and blend until smooth to create a puree.
- Strain the watermelon puree through a fine mesh sieve to remove pulp if desired.
- In a champagne flute, add 2 ounces of watermelon puree.
- Top with 4 ounces of chilled sparkling wine.
- Gently stir to combine, being careful not to lose the bubbles.
- Garnish with a slice of watermelon or a sprig of mint.
