Instructions
- In a highball glass, muddle fresh mint leaves and lime wedges together until the mint is fragrant and the lime juice is released.
- Add simple syrup to the mixture and stir well to combine.
- Fill the glass with ice cubes.
- Pour red wine over the ice, filling the glass almost to the top.
- Top off with club soda to add fizz.
- Gently stir the mixture to combine all the ingredients without crushing the mint too much.
- Garnish with additional mint leaves and a wedge of lime before serving.
