Instructions
- In a cocktail shaker, muddle together fresh mint leaves, lemon wedges, and simple syrup until the leaves are lightly bruised and aromatic.
- Add ice to the shaker and then pour in gin.
- Shake well until chilled.
- Strain the mixture into a champagne flute with ice.
- Top with chilled champagne.
- Garnish with a sprig of mint and a twist of lemon.
