- Muddle the fresh mint leaves with simple syrup in a rocks glass to release the mint oils.
- Add the bourbon and muddle again to mix flavors.
- Add the fresh pineapple chunks and gently muddle them to combine with the bourbon and mint.
- Fill the glass with ice and top with soda water; stir gently to combine.
- Garnish with a slice of pineapple and a sprig of mint.
