Instructions
- Peel and pit a ripe peach, then puree it until smooth in a blender or food processor.
- In a chilled champagne flute, pour 2 ounces of the peach puree.
- Slowly top with 4 ounces of chilled sparkling wine, pouring gently to preserve the bubbles.
- Stir lightly to mix the puree and sparkling wine.
- Garnish with a fresh slice of peach on the rim.
