Instructions
- Chill a coupe glass by filling it with ice water.
- In a cocktail shaker, add 2 oz of amaro, 1 oz of simple syrup, and 1 whole egg.
- Dry shake (without ice) for 10 seconds to emulsify the egg.
- Add ice to the shaker and shake again for 15 seconds to chill and dilute.
- Strain the mixture into the chilled coupe glass.
- Top with 2 oz of sparkling wine.
- Garnish with grated nutmeg on top.
